WARM SALAD WITH BRAISED OCTOPUS

Full of protein and very interesting dish, that suits a relaxed lunch.

  1. A chubby octopus and you have to offend it seriously (beat with hummer for more tender result)

2. 4-5potatoes

3. 3 onions

4. 2 garlic gloves

5. Half lemon skin

6. Dry paprika and cayenne pepper

Steps:

1. Heat the saucepan on high heat and add the oil.

2. Add roughly chopped onions the smashed garlic gloves.

3.  In a while, add paprika and cayenne pepper. Stir over high heat until the onions start to soften, about 5 minutes. Do not add salt!!

4. Put the octopus with the vegetables and cook for another 3 min on high heat.

5. Add about 200ml of warm water, add 2 bay leaves, a piece of lemon skin and reduce the heat to medium-low.
Cook until the octopus becomes tender. It will need about 40-60min according to the size of the octopus.

6 . Place the octopus in a big bowl, add the braising liquid, wait until it cools down and place in the fridge for a couple of hours.

7. Remove the octopus from the braising liquid.

8. Cut in serving portions and fry on a well preheated pan for 3-4 min each side, make it almost charred.

9. Strain the braising liquid, bring it to boil, add 2 table spoons of olive oil,   salt and pepper according to your taste. The serving sauce is ready.

10. Roast the potatoes separately.

11. Place  the roasted potatoes and the octopus pieces on the top. Finally add some chopped parsley.

12. Drizzle it well with the serving sauce and start eating it while it is warm.
