PASTA WITH ANCHOVIES: DELICIOUS!!

Fast delicious recipe for Sunday lunch with family and friends.

Basically this pasta  is a modification of  «spaghettata di mezzanotte»(midnight spaghetti) which is considered anafter-party Italian tradition, can be cooked fast, has anamazing taste to share with your company in the calm and cozy kitchen.

What we need:

  1. Spaghetti or tagliatelle (I like the ones with squid ink, having an attractive contrast between black and red   )
  2. 10-12 anchovies
  3. 4-5 big riped tomatoes (chopped)
  4. 10-15 – grape or cherry tomatoes
  5. 5 garlic cloves (smashed)
  6. 1 small chilly pepper (finely chopped) or chilly flakes
  7. 1/4 cup of olive oil

Steps:

Cook the pasta in boiling salted water for 2 minutes less thanit is recommended on packet instructions. Drain it and reserve 1/2 cup pasta water

In a sauté pan on a medium heat put the oil, fry the garlic, chilli and anchovies for 2-3 minutes until the garlic becomes soft and the anchovies start to melt. Be careful, if the garlic burns we need to start from the begining.

Add chopped ripedtomatoes and whole cherry or grape tomatoes, and decrease the heat.  Mix the sauce with small intervals until it becomes homogeneous and the cherry tomatoes soften and skins just begin to wrinkle.

Put the ready drained pasta, add ½ cup pasta water and cook for another 2-3 min.

Serve with basil leaves and freshly grated parmesan. That’s it.

On Sundays, after lunch and before afternoon siesta (man and kids previlage only) we need some pleasant chatting and digesting. My favorite dessert after pasta is roughly cut mature parmesan with honey dip anda glass of iced limoncello (easily replacinga fizzy fruity white wine)
