Pumpkin is well known for its health benefits, it is rich in dietary fibres and has a very big plus, a mouth-watering taste with very low calories.

Ingredients: Pumpkin Rhapsody2
  1. 3 small pumpkins
  2. 3 ripe tomatoes peeled and chopped
  3. 300 mg of cleaned pumpkin and cut in cubes
  4. 2 medium onions, finely chopped
  5. 2 pinches of curcuma
  6. 2 chicken breasts cut in small square pieces
  7. 1 table spoon of olive oil
  8. Chopped parsley
Steps:
  1. Cut the heads of small pumpkins and take out the pulp.
  2. Place the chicken breasts in a skillet, add 3 table spoons of water and cook for approximately 10 min. Pumpkin Rhapsody3
  3.  In a sauté pan, put one table spoon of olive oil and 2 table spoons of water.
  4. Add chopped onions and sauté until they are soft.Pumpkin Rhapsody4
  5. Next, put chopped tomatoes and prepared pumpkin cubes, let it sauté well in their own juice for 5min.Pumpkin Rhapsody 5
  6. If the pumpkins are “pale” add 2 pinches of curcuma to get a more sunny colour.Pumpkin Rhapsody 6
  7. Stir in the chicken pieces and cook for another 5 min Pumpkin Rhapsody 7

  9. Stuff the small pumpkins with chicken and vegetablesPumpkin Rhapsody 9
  10. Apply olive oil on the pumpkins using a brushand put them in preheated oven (180C) for 30-40 min.
