One portion has about 350 kcal.
Pumpkin is well known for its health benefits, it is rich in dietary fibres and has a very big plus, a mouth-watering taste with very low calories.
Ingredients:
- 3 small pumpkins
- 3 ripe tomatoes peeled and chopped
- 300 mg of cleaned pumpkin and cut in cubes
- 2 medium onions, finely chopped
- 2 pinches of curcuma
- 2 chicken breasts cut in small square pieces
- 1 table spoon of olive oil
- Chopped parsley
Steps:
- Cut the heads of small pumpkins and take out the pulp.
- Place the chicken breasts in a skillet, add 3 table spoons of water and cook for approximately 10 min.
- In a sauté pan, put one table spoon of olive oil and 2 table spoons of water.
- Add chopped onions and sauté until they are soft.
- Next, put chopped tomatoes and prepared pumpkin cubes, let it sauté well in their own juice for 5min.
- If the pumpkins are “pale” add 2 pinches of curcuma to get a more sunny colour.
- Stir in the chicken pieces and cook for another 5 min
- Mix up with the chopped parsley.
- Stuff the small pumpkins with chicken and vegetables
- Apply olive oil on the pumpkins using a brushand put them in preheated oven (180C) for 30-40 min.
