BLINCHIKI WITH MEAT

Blinchiki is very nice wraps filled with juicy meat. This is my granny’s recipe. She used to give me and my sister blinchiki for school lunch. They are good for main dish, like finger food for parties, suits for open air picnics.

Ingredients:

  • 500 g of minced beef
  • 500 g of minced pork
  • 3 medium onions chopped
  • 1/2 cup cooked rice* optional
  • 1 liter of water
  • 5 eggs
  • Plain flair
  • 2 tbs of olive oil
  • Salt and pepper
  • 1/2 cup of sour cream

Steps:

  1. Heat olive oil in saute pan
  2. Add finely chopped onions and cook until translucent
  3. Add minced meat (pork and beef together) and cook until ready
  4. In separate pan cook rice
  5.  Mix meat with rice and season well with salt and black pepper
  6.  In a large bowl stir together the eggs and water, whisk well
  7.  Add the flour and mix until you reach the consistency of oil
  8.  Heat a lightly oiled frying pan over medium high heat.
  9.  Pour the mixture using approximately 1/3 scoop for each pancake. Tilt the pan from side to side while pouring, forming a circle with the mixture.
  10.  Cook only from one side until the surface looks porous.
  11.  Place one crepe on the table and put about 1-2 tablespoons of the meat mixture near the centre.
  12.  Wrap it: fold the bottom to cover the meat.  Fold the sides in, and roll up
  13.  Heat the olive oil on frying pan and place the ready blinchiki on pan . Fry 1- 3 min from each side according to how crunchy you like them  (from tender golden to sure brown color)
  14.  Ideal with cold sour cream with spring onions or chives
