- 4 table spoons olive oil
- 500 g of beef sliced in strips
- 3 large onions, peeled and sliced in half rings
- 4-5 bell peppers of various colours, seeded, sliced into strips
- Juice of 1 lime
- 2 cloves of garlic smashed
- 1/2 teaspoon ground cumin
- couple of thyme branches
- 10 cherry tomatoes – chopped
- 1 finely chopped shallot
- chopped coriander with stems
- 100 ml of sour cream
- pinch of chilli pepper powdered
- 2 dry chilli peppers
- 1 teaspoon oftomato paste
Steps:
- Place the beef stripes in a glass bowl. Add the olive oil, lime juice, dry chili peppers, ground cumin, smashed garlic and salt. Shake until well mixed and put in the fridge for at least 3 hours tomarinade.
- Heat a large skillet over medium-high heat. Put olive oil and add the onions. Cook for about 5 min, stir in a pinch of chili pepper powder.
- Add the bell peppers and cook for another 5-7 min. The vegetables should become tender but remain juicy.
- Add 1 teaspoon of tomato paste and stir well for another 2min
- Add the beef strips, 2 table spoons of marinade, and cook the meat for about 5 – 7 min
- When its ready, season it with cut coriander
- Serve with warm tortillas and optional garnishes.
I love sour cream and cherry tomatoes with coriander andshallot (mix all the above ingredients, squish ½ lime and add salt
Traditionally, fajitas are served in a frying pan. For more effective look you can add one shot of tequila and put fire on it before starting to eat it!
